Roasted Red Pepper Hummus

Brief: Delicious and easy to make Roasted Red Pepper Hummus. 

Ingredients

2 whole red bell peppers (substitute about 3/4 cup chopped jarred roasted red peppers)
1 (15-ounce) can chickpeas or 1 1/2 cups (250 grams) cooked chickpeas
1/4 cup (60 ml) fresh lemon juice, about 1 large lemon
1/4 cup (60 ml) tahini
1 small garlic clove, minced
2 tablespoons extra virgin olive oil, plus more for serving
1/2 teaspoon ground cumin
½ teaspoon paprika
Salt to taste

Process

Step 1. Get the pits and seeds out of your red peppers, cut them in half and get them in the oven. I put them on Broil at about 350 Celsius. Should take about 10 minutes to blacken up the outsides but keep and eye on them. When the outside looks a little blackened take them out and let them sit. If you cover them or put them in a ziploc it helps peel off the burnt skin later.
Step 2. Crack open those chickpeas and put about half of the can in food processor along with the olive oil, lemon juice, tahini, garlic, cumin, paprika and of course salt. Blend all that good stuff into a nice creamy mix. It should end up being a nice smooth texture. If it’s too thick just add a little more olive oil or water.
Step 3. Add in the rest of the chick peas to thicken it up to optimal hummus texture. Thicker than yogurt, thinner than peanut butter, you know what I’m talking about.
Step 4. Grab those red peppers and peel that burnt skin off and then put those suckers in the processor.
Step 5. Blend it all up and add spices to taste. A quick heads up, you can always add more in, you can not take anything out. Having a heavy hand when it comes to spices and mess up your Hummus. No bueno. Oftentimes a little more salt will do the trick.
Step 6. My not-so-secret ingredient is honey. I’ve never heard of anyone else ever putting honey in their hummus but I tried it once and it gives it a sweat finish. Might have been a fluke but if you’re feeling crazy, give it a try, or don’t, whatever.
